Cashew Fudge

Cashew Fudge / Kaju katli is a very famous dessert made with very few ingredients. Its very easy and quick dessert that can made within 20 minutes. These ingredients are always in the pantry so you can make it any time you feel like eating them. Following these steps exactly your Cashew Fudge will melt in the mouth.

Ingredients

  • Cashew - 1 cup leveled
  • Sugar - 12 cup Water-14 cup Milk -1 tablespoon (only if needed) Silver varak 5-6 sheets (optional)

Instructions

  1. Pulse the cashew in mixer to a coarse powder. Make sure cashew nuts are at room temperature for grinding. Over grinding the cashew will make it leave oil, so please be careful while grinding. Usually I pulse for 30 seconds check the cashews and pulse again if needed.
  2. Boil sugar with water in a non -stick pan, when the water bubbles put the cashew powder into it. The stove should be in medium low setting after putting the cashew powder.
  3. Keep stirring the mixture until it thickens and forms a lump. The cashew mixture will leave the edges usually in 7-9 minutes.
  4. Transfer it to a greased bowl or plate and let it cool.
  5. When the mixture is warm it will be sticky, start kneading it with greased hands for couple of minutes for fine texture. It will turn in to a smooth ball after kneading.
  6. Place the dough between parchment papers, roll it evenly with rolling pin into 14 inch thickness and cut into rectangle shape.

Tips

  1. The mixer should be completely dry for grinding.
  2. Pulse cashews in small batches in small mixer jar. Cashew powder will turn oily and if you make with that cashew paste katli will be chewy.
  3. The powder can be sieved for cashew bits.
  4. Non- stick pan is easier to make the Cashew Fudge.
  5. Greased plate can be used instead of parchment paper.
  6. Stirring continuously for 7-9 minutes is a must till dough comes together. Cooking time may vary on different stoves. The stove should be only on low heat.
  7. Kneading is a must for smoothness without kneading Cashew Fudge will be grainy. While kneading if the mixture is dry add a spoon of ghee or warm milk usually not necessary. Adding milk will lower the shelf life. It will stay fresh for 5 days on counter and up to 10 days in fridge.
