This is a simple yet tasty dish. This pasta is made with cilantro pesto. Chickpea Pasta, one of the best swaps for traditional pastas. I personally prefer this pasta because its both healthy and also packed with protein.

Does chickpeas pasta taste good?

In general, not all healthy food, taste good. This pasta is one of the exceptions. Although, the texture is slightly different from regular pasta. This dish is a balanced combination of protein and nutrients. Indeed, its a winner and weekly favorites of my family.

Chickpea pasta goes very well with this inviting and colorful pesto. Usually, I love to make this easy dinner after local farmers market trips. Also, this lemon cilantro chickpea pasta is vegan.

Cilantro Pesto

Unique fragrance of cilantro combined with citrusy flavor of lemon. It gives the cilantro pesto an additive taste.
Added bonus, fresh ginger kicks up your taste buds. Now, for the pesto grind cashews finely in a food processor. Then add cilantro, ginger, lemon juice, olive oil and salt and process to fine paste.

Shelf life of cilantro pesto and uses

This pesto can be stored in fridge up to a week. It can be used as spread or dip. Likewise, as dressing in salads and Buddha bowls.

How to make this lemon cilantro chickpea pasta?

You can add your choice of veggies and meat to this pasta. Cook Pasta according to the package direction. Reserve some pasta water to use later in case you want to loosen up pasta. Just as the pasta cooks, saute your choice of vegetables. Then, add this to cooked pasta along with cilantro pesto. Finally, mix well and serve.

Ingredients

  • 1 8 0z chickpeas pasta cook according to the package direction
  • 4 tbsp olive oil
  • 1 cup vegges of your choice carrots,capsicum,cauliflower,peas
  • 1 cup cilantro
  • 10-15 piece cashew nut
  • 1 tbsp lemon juice
  • 12 inch ginger
  • 1 tbsp sun dried tomatoes optional
  • salt
  • crushed pepper optional

Instructions

  • First cook the pasta according to the direction on the package.
  • While pasta cooks prepare the veggies,cut your veggies and saute it in a pan. Cook the veggies on high flame for short time. This makes them crunchy.
  • In a food processor grind cashews finely. Then add cilantro, ginger, lemon juice and salt and process to fine paste. Finally add a tablespoon of olive oil and pulse it. This pesto can be stored in the fridge up to a week.
  • Finally, mix the veggies along with cooked pasta and add the pesto. You can adjust the dressing according to your taste. You can increase olive oil for richness of the dish.
  • Serve it right away.
