ORIGINS OF PICO DE GALLO, AKA SALSA FRESCA?

According to Wikipedia-In Spanish, Pico de gallo means “beak of the rooster”. Pico means ‘beak’ and ‘gallo’ means ‘rooster’.

Originally Pico-de-Gallo got its name as its eaten with the thumb and forefinger, and retrieving and eating resembles the actions of a pecking rooster.

DIFFERENCE BETWEEN PICO DE GALLO AND SALSA?

You might be wondering about the difference between Pico de Gallo and salsa. We use the same ingredients for both, but the preparation and texture is different.

Salsa is usually much thinner while Pico de Gallo is thicker and more like a salad. Traditional salsa is usually cooked, while Pico de Gallo is made fresh.

Moreover, preserving and canning is possible with Salsa not with Pico De Gallo.

HOW TO MAKE THIS EASY PICO DE GALLO?

All you need is six ingredients: ripe red tomatoes, white onion, jalapeño, cilantro, lime and salt. That’s it. Roma tomatoes are a good choice since they are less watery. Core your tomatoes and remove the seeds and gelatinous matter from the tomatoes before chopping. In a medium serving bowl, combine the chopped tomatoes, onion, cilantro, lime juice, and jalapenos. Taste, and add more salt if needed.

HOW LONG DOES FRESH PICO DE GALLO LAST IN THE FRIDGE?

Fresh Pico de Gallo is best consumed within 4 hours or store in an airtight container in the fridge for up to 2-3 days. Over time, the tomatoes and cilantro will get mushy and lose their freshness.

Ingredients

  • 1-12 lbs fresh tomatoes seeded and chopped about 4-large tomatoes
  • 1 cup white onion chopped
  • 12 cup fresh cilantro chopped about 1 bunch
  • 14 cup fresh lime juice
  • 2 jalapeno peppers seeded and chopped
  • kosher salt to taste

Instructions

  • Core your tomatoes and remove the seeds and gelatinous matter from the tomatoes before chopping.
  • slice Jalapeno peppers lengthwise and scrape out the seeds and membrane. chop them finely.
  • In a medium serving bowl, combine the chopped tomatoes, onion, cilantro, lime juice, and jalapenos.
  • Taste, and add more salt if needed.

Recipe Notes

Notes Homemade Pico de Gallo can be made up to 48 hours ahead. Cover it and store in the refrigerator until ready to serve. Use ripe red tomatoes. Let your pico rest for 15 minutes before serving.
