Breakfast Casserole

Breakfast casserole are healthy and simple option. It’s a great way to start a day with protein and vegetable packed breakfast. The perfect savory breakfast for get- together with family and friends. Spinach, mushrooms, carrots, and onions baked with eggs taste great.

This breakfast casserole is an easy dish for busy mornings. Prepare and refrigerate overnight and bake in the morning. Moreover, it freezes well. I usually bake ahead and freeze them for busy weekdays.

I used a large cast iron skillet to bake my casserole. Instead, this casserole can be made with any made in any casserole pan.

Breakfast Casserole

Breakfast casserole are healthy and quick fix option for whole family. Prepare and refrigerate overnight and bake in the morning.

Ingredients

  • 8 eggs
  • 1 cup spinach chopped
  • 10 mushroom sliced
  • 2 carrot cut
  • 1 onion chopped
  • 3 tbsp cheese
  • 1 tbsp oil/butter

Instructions

  • Chop onions finely .Cut mushrooms and carrots.
  • Saute onions in butter in an oven safe skillet and add mushrooms after a minute or two. After mushrooms are browned, add carrots and spinach. After the spinach wilts and remove the skillet from the stove.
  • Let the mixture cool. Add beaten eggs with salt and pepper to the dish along with shredded cheese.
  • Bake in the preheated oven at 375 for 23-25 minutes. Keep an eye on Casserole from 20 minutes.
  • Let the casserole cool for 5 minutes. Cut and serve the breakfast casserole with toast or cut fruits. <!–

Recipe Notes

  1. Baby kale greens or any other greens can be used instead of spinach in casserole.
  2. Avocados, tomatoes, potatoes, cauliflower, zucchini can be added for vegetables in casserole.
