As Diwali is just around the corner, try this Almond/ Badam flour Katli with Almond Flour which saves time and gets ready in 20 minutes.

On such auspicious occassions like Diwali, we hussle bussle with lot of stuff like cleaning, shopping and decor and to top it up we all would like to share sweets with our loved ones right? - trust me this Almond/badam flour katli on stove-top comes to rescue as it only needs one pot to make.

Its a gluten free sweet and to make it Vegan, use Vegan butter or Coconut oil or you can just skip the ghee.

What is Katli?

Katli is similar to fudge which is more drier, thinner and made with nuts powder and sugar syrup.

The most common Katli is Cashew katli/Cashew Fudge

Traditionally, we grind the nuts into a fine powder and then add to the sugar syrup. Once the mixture thickens, roll it out thin and cut into pieces.

We can flavor this Almond Katli with – Saffron, or Cardamom powder.

How to make Almond/badam katli on stove-top?

In a pan add sugar ghee and saffron and boil till you get 1 string consistency, now keep under medium flame and then add almond flour and mix continuously, cook till it leaves the sides of the pan.

leave for 5 minutes to cool and then take on to parchment paper and roll into 14 inch thickness and cut into diamonds.

Can I Try with whole Almonds?

Absolutely Yes, Just have to soak the almonds first, remove the skin and then pulse them in a blender/food processor to get the flour.

Almond/ Badam Katli

Almond/Badam Katli can be made easily and takes less than 15 times. Its delicious and tasty quick fix dessert.

Ingredients

  • 1 cup almond flour
  • 12 cup sugar
  • 14 cup water
  • 2 tbsp ghee coconut oil/vegan butter (vegan)
  • saffron few strands

    Instructions

    1. In a Pan add Sugar, Water, Saffron on a medium flame. Stir and let the sugar dissolve and comes to 1 string consistency, turn the heat to low.
  • 2.Then Add the flour and keep stirring so that no lumps are formed.

  • 3.Add a tablespoon of ghee and mix.

  • 4.Keep cooking and stirring until the mixture leaves the sides.

    1. Transfer the Almond mixture onto the parchment paper and let it cook for 5 minutes and then place another parchment paper on top and roll with rolling pin. The thickness should be around 18 -1/4th inch.
    1. Cut into diamonds and Let it dry completely and store in air tight container.

Recipe Notes

If Almond Katli turns out to be dry add a teaspoon of  milk (room temperature) to it and knead the dough well. Roll it thin and cut the katli.
