Today I am sharing my all time favorite chicken kebab recipe. Chicken kebab on skewers are always a big hit in my family. These perfectly baked kebabs are juicy, flavorful and moist.

I make these chicken kebab frequently. They’re a perfect combination of tender marinated chicken with a variety of veggies. As a matter of fact, marinating chicken before cooking not only add flavor, but to also tenderize the meat and keeps them incredibly moist.

What makes this chicken kebab recipe special?

  • Just skewers are needed, you dont need any grill or oven grill racks for baking this.(I used a small stand for oil to drip)
  • Easy to make, marinate some veggies and chicken thighs for a couple of hours and add them to skewers (skewers soaked in water).
  • Its ready in half an hour.
  • Moreover, this is also a great party appetizer and can be marinated the day before and baked just before the guest arrive.

How to make these Kebab?

Marinate the chicken and veggies of your choice with shan masala for over night or a couple of hours. I added paneer (Indian cheese) along with peppers and onions. Thread them on skewers and place in preheated oven at 450 for 30 minutes.

Home made marination

Similarly, if you prefer home made marination then you can add paprika, garlic ginger paste, lemon juice, garam masala, olive oil to chicken and marinate.

If you want the kebabs to have nice color without spice, broil them for a couple of minutes. However, I didnt broil them because I used chili powder for my chicken kebab recipe.

CHICKEN KEBAB RECIPE

Ingredients

  • 1 lb chicken boneless thighs cut into 1 inch chunks
  • 2 bell pepper cut into 1 inch chunks
  • 1 onion cut into 1 inch chunks
  • 4 oz paneer cut into 1 inch chunks
  • 13 cup olive oil
  • 1-2 tsp Shan Kebab masala according to your spice level
  • 1 tsp garlic paste

Instructions

  • Take all the marinade ingredient in a bowl and add cut chicken, pepper, onion and paneer and mix well leave it for couple of hours or overnight.
  • Soak the bamboo skew ers into water (to prevent burning) while the chicken marinates. Now, thread the marinated chicken and veggies in skewer.
  • Preheat oven to 450 degrees and keep the skewers on a stand or backing rack. place aluminum foil to collect dripping oil.
  • bake the chicken for 25 minutes flip them in half way. Broil for 5 minutes if you want nice color.
  • Remove the kebab from oven and let it cool for 5 minutes before serving.
