One dough for three different breads from three different corners of world. How wonderful! Using this basic pumpkin dough recipe you can make 3 different recipes such as Pizza, Pita, or Naan. How cool is that? It is so easy to prepare and, unlike some dough recipes I have tried, it tastes delicious and a bonus is adding pumpkin puree to the dough.

I know kids who doesn’t eat any veggies and it’s a continuous struggle for mothers to feed the little ones with veggies and this recipe comes to rescue as kids cant find the difference in texture as well as taste.

Pumpkin Puree

  • Wash the pumpkin, cut it and discard the seeds and veins.
  • Now steam the pumpkin along with skin in steamer till it is tender and easy to mash.
  • Let it cool and then scoop of the flesh, discarding the skin

Tips to make perfect Dough:

To start make sure your yeast is active,

In a small bowl add the water, make sure it is lukewarm (if it is too warm it will kill the yeast), then add a pinch of sugar to the water.

Sprinkle the yeast over the top, stir to combine, then let it rest for about 5 minutes.

If the yeast is active it will dissolve in the water, thereby making the mixture frothy.

Basic Pumpkin Dough

Basic Pumpkin Dough for making 3-quick recipes.

Ingredients

  • 3 cups all purpose flour
  • 1 cup Pumpkin puree can/fresh puree
  • 13 cup olive oil
  • 1 tbsp original dry yeast
  • ½ tsp salt
  • 1-2 tbsps Water to activate yeast
  • 2 tsp sugar

Instructions

  • First add warm water to yeast and sugar in a bowl. let sit for 5-10 minutes until the yeast dissolves and starts to become frothy.
  • Add flour, salt, olive oil and mix the dough. It should be soft and not sticky.
  • Sprinkle a little of extra flour onto your clean work surface and knead the dough for about 5-7 minutes, until the dough is smooth.
  • Cover and let the dough rise in a warm place until it doubles in size.

How to Freeze Pumpkin Dough?

If you are freezing, then store after the dough raises. Punch the dough down and divide it into required portions and freeze in an airtight container/resealable plastic bags.  To thaw, let the dough come to room temperature (about 1 hour) and then roll out into pizza/pita/naan.  

Pumpkin Pizza

 Pizzas are great crowd-pleasers. It suites for any occasion. Be it a quick weeknight dinner, a get together or a party. This pumpkin pizza distinguishes from your regular pizzas.

  • Prep Time: 1 hour
  • Cook Time: 15 minutes
  • Servings: 8

Ingredients

  • Basic Pumpkin Dough
  • 1 Cup Tomato Sauce
  • 8 oz Mozzarella cheese shredded

Instructions

  • Preheat oven to 410 °F. Punch dough down a few times.
  • Flatten the dough with rolling pin to make pizza and transfer the dough onto pizza tray.
  • Then apply tomato sauce on each pizza and add cheese on top of it and bake for approximately 15-20 minutes. Enjoy!

Recipe Notes

Variations:

If you want to use veggies then top with your favorite veggie/ fruit toppings (without the cheese), bake for approximately 15-20 minutes (until crust is light golden) and then top with grated mozzarella cheese and bake until cheese is melted around three more minutes. 

STIR-FRIED VEGGIES 

In a medium frying pan add thinly sliced onions and fry for 2 min then add tricolor peppers, paneer (Indian cheese) and mushrooms and a drizzle of olive oil, 12 teaspoon oregano, basil, salt and chili powder, garam masala to taste, cook on medium for approximately 10 minutes. Use as topping for pizza (on the sauce and then bake).

White Pizza Sauce: One jar of Alfredo sauce or homemade Alfredo sauce in place of Tomato sauce.

Adding 12 spoon of chicken tikka masala powder or chili powder with garam masala gives a nice twist to pizza.

Pita Bread recipe

Pita with pumpkin dough

You can make pumpkin dough pita bread either in an oven or on a stovetop.

* Prep Time: 1 hour * Cook Time: 10 minutes

Instructions

  • Gently deflate the dough and divide the dough into 10- 12 equal pieces and gently flatten each piece into mini-round discs about 14-inch-thick using a rolling pin.

To Bake Pitas in the Oven:

While shaping your pitas, heat the oven to 450°. Place a large baking sheet on the middle rack to heat.
Place the rolled-out pitas directly on the baking sheet and bake for about 3 minutes. The pita will start to puff up after a minute or two and is done when it has fully ballooned. To retain freshness, cover baked pitas with a clean dishtowel while cooking remaining pitas.

On Stove-top:

Warm a cast iron skillet over medium-high heat and drizzle oil in the pan and wipe off the excess.
Lay a rolled-out pita on the skillet and bake for 30 seconds, until you see bubbles forming. Flip and cook for 1-2 minutes on the other side, until large toasted spots appear on the underside. Flip again and cook for another 1-2 minutes to toast the other side.

The pita should start to puff up during this time; if it doesn’t or if only small pockets form, try pressing the surface of the pita gently with a clean towel.

Naan - Indian flat bread recipe

A soft, fluffy naan is everyones favorite Indian flatbread. Traditionally Naan is cooked in clay oven or a tandoor but this naan is made on stove-top in a cast-iron skillet.

Ingredients

  • Instructions

  • Take the basic pumpkin dough onto well-floured surface. knead it and divide the dough into 8-10 equal portions. Using rolling pin, roll it into 14 inch rounds/ ovals.

  • Heat a cast-iron pan/griddle over medium high heat. Place the Naan on the pan and cook for about 1 minute, until the dough puffs up. Flip it and cook for 1 more minute. Remove from the pan and its ready to be served.

For more flavorful Naans:

  • Butter Naans: After cooking the Naans, brush both the sides with butter.
  • Garlic Naans: Melt the butter and add some chopped garlic and coriander leaves in a bowl and brush this mixture onto the cooked Naans immediately.
