Stuffed Sweet Peppers

These stuffed mini sweet peppers are perfect for snacking/bite-size Party Appetizer.

Our favorite thing to do while watching a movie or a game night is to munch on a bowl of Nachos and skipping our dinners…

When we first saw these colorful peppers in the produce section, we got it without knowing what to do at first place … so they stayed in the fridge for almost a week then to only finish off we made nachos by stuffing sweet peppers with nachos and we fell in love with these beauties from then on we get these mini Sweet peppers very often but with different stuffing every time.

You can make with only three ingredients like: Pico-de-gala(salsa), mini peppers and cheese.

To make it Keto friendly, use any cooked eggs or meat that you prefer and top it with cheese.

Few stuffings that my family liked are:

  • (Soya granules(Veg crubles) cooked with spices.
  • Paneer(Indian Cottage cheese) mixed with spices.
  • Boiled/Scrambled Eggs with added spicesCooked meat with onions and spices(Chicken or Lamb)

Here I am sharing our simple go to nachos stuffed Sweet Peppers but do try with your own favorite stuffing.

  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Ingredients

  • Mini Sweet Peppers: 12
  • Tomatoes: ¼ cup
  • Onions: ¼ cup
  • Pickled Jalapenos: 4 slices(chopped)
  • Salt to taste
  • Taco seasoning: 1 teaspoon
  • Black beans: ¼ cup(cooked)
  • Mexican blend cheese: 1 cup
  • Coriander Leaves: 3 springs(chopped)

Instructions

  • Preheat oven to 400F.
  • In a Bowl, mix all the ingredients except cheese and mini peppers and keep aside.
  • Cut the mini Peppers lengthwise and take off the seeds.
  • Fill these peppers with the mixture and top with cheese.
  • Bake for 8- 10 minutes till the cheese melts Then turn the oven to broil mode for 2-3 minutes(keep an eye at this stage as it can burn the cheese easily)
  • Serve hot.

Recipe Notes

  • You can use canned corn, olives too for stuffing.
  • We can use canned Black beans or get freezer section ones.
  • I Used Pickled Jalapenos here, but you can use chopped jalapenos for spice.
  • For Indian flavor: After taking sweet peppers out of oven, sprinkle some chat masala on top.
